Saw these gorgeous rainbow cupcakes everywhere, and decided to give them a whirl! Even though they're no longer so unique, with variations popping up left right center on social media outlets, who can deny the fact they're beautiful? When I started baking, I loved watching The Scran Line's YouTube channel for decoration inspiration. Here, I recreated Nick's Dancing Queen cupcakes, with my own twist!
What you will need:
Makes 16 cupcakes
430g cake flour
230g caster sugar
1/2 tsp salt
3 tsp baking powder
375ml of milk
130ml vegetable oil
130g unsalted butter, softened
1 tsp vanilla extract
2 large eggs
2 tsp strawberry essence
1 tbsp strawberry preserve
Yellow, green, blue, pink and purple gel food dye
How you make it!
Preheat the oven to 175 degrees Celcius, 350 degrees Farenheit
Combine the preserve with the sugar, so that the sugar becomes pink and slightly sticky
In a stand mixer, mix together the flour, strawberry sugar, salt and baking powder.
In a seperate measuring jug, whisk together the eggs, milk, vanilla extract, strawberry essence and oil.
Add the butter to the flour mix, beat on medium-low speed until the flour forms a sand-like texture.
Slightly increase the speed, slowly pour the milk mixture into the flour mixture, pouring a steady stream.
Beat on medium-high speed, until fully combined. Seperate into four different bowls, and color one of the bowls with two drops of yellow dye, one of the bowls with two drops of blue dye, one with two drops of pink dye, one with two drops of green dye and one with two drops of purple dye.
Add each coloured batter into a piping bag or zip lock bag and pipe small blobs of each colour into the cupcake liners filling them up ¾ of the way.
Bake for 30 min or until a toothpick inserted comes out clean. Allow them to cool completely on a wire cooling rack.
Frost if you'd like, or eat them! I like to dip mine in some extra strawberry sugar. Enjoy!
