What I'm Cooking! August 23rd 2020

Back at school already! That means it's now no longer summer, and we're shifting towards Autumn. For us Singaporeans, that means that the days are becoming less rainy, and luckily it's still durian season! School is quite tiring, with my two moods being a) an exhausted mess or b) social interation is overrated I want to go home and eat ice cream. Enough of the whining! When it's time to wipe the dust off our backpacks and pencil-cases and head to school, we students obviously don't have time to be sitting around for hours in a kitchen! Today, I'm sharing the easiest, quickest and most delicious recipes I know!

When I have things to do or just can't be patient enough to sit and watch over a sizzling stove, I like making some quick and tasty things to eat. Some of my favorite snacks and meals include the quick and delicious Tteokbokki, vanilla ice cream with pretzel sticks (try it! It's a killer combination!), apples with peanut butter, or a fast and easy tom-yum omelette. Here, I've included two of my favorite lunch recipes, both created by me! Enjoy!


Kimchi Fried Rice!

What you will need (one serving):

  • One serving of cooked rice

  • 1/3 to 1/2 cups kimchi, depending on personal preference

  • One spring onion, chopped

  • 1/4 cup kimchi juice

  • Half an egg, beaten

  • 100g pork, diced into small cubes (optional)

  • 1 tablespoon sesame oil

  • 2 teaspoons soy sauce

How to make it!

  1. Heat some oil in a small pan, and fry the pork until just about cooked through

  2. Add the kimchi, and fry until fragrant, about two minutes

  3. Add the spring onion, and rice

  4. Beat the egg, and add the soy sauce and sesame oil to the egg

  5. Add the egg to the rice mixture, stirring vigorously so that the egg coats the rice, without clumping and turning into omelette.

  6. When the rice looks glossy, but not totally wet, it's ready to serve!\


Chasoba

What you will need:

  • 1 bunch green tea soba

  • Soba sauce

  • Nori

  • Sesame seeds


How to make it!

  1. Boil the green tea soba, for exactly four minutes, or as the package directs

  2. When it's cooked, immediately dunk into ice water

  3. When serving, serve with the soba sauce, and sprinkle with sesame and nori
